- 8 oz. ginger, peeled, chopped
- ½ cup fresh lemon juice
- ⅓ cup agave syrup (nectar) or pure maple syrup
- 3 strawberries, hulled
- 4 oz. Lemon-Ginger Brew
- Lemon slice (for serving)
MethodLemon-Ginger BrewStep 1Pulse ginger in a food processor to a coarse paste (or finely grate). Bring ginger and 6 cups water to a boil in a medium saucepan; reduce heat and simmer until reduced to 3 cups, 30–40 minutes.
Step 2Strain into a large jar and mix in lemon juice and agave; add more lemon juice or agave, if desired. Let cool; cover and chill.
Step 3Do Ahead: Brew can be made 2 weeks ahead. Keep chilled.
Step 4Muddle strawberries in a highball glass. Add Lemon-Ginger Brew and stir well. Fill glass with ice and garnish with lemon slice.
